In this field, the preparation and serving of pizza on a bicycle has recently appeared, where you find the oven and the place to knead the pizza dough on the bicycle in one of the streets of Sfax, and when finished, you return home on a bicycle here – Pizza Bike – here, the pizza is prepared for you on a bicycle !

Chef Ghassan is a pizza maker… as they say, “Pizza Bike” is a new mobile pizza maker service that can move from one place to another as needed, for example, between different weekly markets, for example…

Ghassan prepares pizza for regular customers or passers-by on his bike . Ghassan charges the compressed gas oven that can cook pizza at 500 degrees Celsius every two minutes… It doesn’t take much longer for Chef Ghassan, whom we met 

Ghassan had a brilliant idea to combine his passion for pizza with his commitment to a more sustainable lifestyle. On a cargo bike, he traverses streets after streets, with a small pizza oven always at hand. This way, Sfax residents and visitors can enjoy freshly made pizza, cooked on-site, and enjoy a live demonstration of the art of pizza making, a unique artisanal demonstration .

Ghassan says: “ I spent 15 years in Italy as a professional pizza chef, but I have another specialty, which is Tunisian dishes. I was always thinking about returning to my homeland, Tunisia, and launching a unique project that respects the environment, cleanliness, the health of the citizen, and the quality of the materials used. I saw many ideas in Europe in this field, but when I returned to Tunisia, the idea of ​​the “ pizza bike ” captivated me.” 

But the pizza-making process isn’t as simple as we imagine. Chef Ghassan recounts the details : “It all starts 48 hours in advance, with the production of the sourdough. The other aspect of the daily work is procuring the raw materials to make the pizza. I make sure to source high-quality vegetables and cheeses, which will delight the customer when they eat their pizza. Late in the evening, I head on my bike to the designated work location and begin serving my customers at 6:00 PM, after preparing the raw materials, arranging them, and preheating the oven. We continue working at the same pace until we run out of dough.”

And so it is Chef Ghassan’s day, serving pizza on his bike to his customers who love him for his craftsmanship, his good manners, and the prices of the pizza, which many of those we asked consider affordable for everyone, each according to his means. How much we need such projects, which are a source of livelihood for many young people, but we must respect health conditions in order to preserve the health of the customers.

We also call on all relevant authorities to legally regulate this sector by issuing the necessary specifications for this purpose and enabling them to obtain the necessary licenses, thus contributing to the economic cycle and becoming taxpayers.
